Jelly Rolls......

I have been deprived and living a very sheltered life, because I had never heard of these or ever had them before.  Where have they been my whole life?

3 cups milk....I used soy milk, of course.  If anyone tries them with rice milk let me know if that works.
1 teaspoon vanilla
3 cups flour
½ cup sugar
½ teaspoon salt IMG_9818Beat eggs with a fork until well blended, add milk and vanilla, beat with a fork until well blended again.
Keep beating as you add the flour, sugar, and salt. Try and get it as smooth as you can. IMG_9819IMG_9821IMG_9822IMG_9825Melt a little butter in a pan and cook the batter as you would regular pancakes. IMG_9827Flip it on the other side, it only takes a few seconds to finish.IMG_9828Serve with butter and cinnamon/sugar, powdered sugar, syrup, jam, or Nutella.IMG_9826We put a little butter, cinnamon and sugar on one.  This was my favorite....as you know from the Snicker Doodle post, I have a thing for cinnamon and sugar.....it is sooo good!IMG_9844We also had Cinnamon Apple Jelly.......IMG_9843Strawberry Jelly.....IMG_9842and Nutella, which of course, was Hailee's favorite.IMG_9836IMG_9850IMG_9846IMG_9847IMG_9838These did not taste like pancakes or crepes.  They had their own texture, which was sponge like.  They are really good, they might even be better than pancakes.....I'm not sure yet, I will have to try them several more times, before I really can make a decision!  It is a tough job, but someone will have to do it.

This recipe made a lot of batter, which was good because I just put it in the fridge and Hailee ate it for breakfast a few days before school.

I first thought they were jelly roll cakes but then when I read the ingredients and viewed the photos I saw they are like a pancake. They look so delicious and I wish I had one now:) Happy New Year.
