Cranberry Harvest Muffins

I don't know about you all but I had a lot of food left over from all the Holidays. I can't think of anything I hate more than wasting good food. This week I noticed I still had a lot of fruit and nuts left over from my fruit mincemeat. What to do??? After searching online for something fun, I found these muffins and was able to use some of what I had on hand. Super bonus that they rock!!! The Kido inhaled them fresh out of the oven!

What you need to get started.

Make a well in the bottom. DSC03505

Mix quickly after adding in eggs, milk, and butter, until just combined.

Course chop your cranberries and put a medium dice on your figs.

Add fruit and nuts. DSC03508

Final step before mixing, add sugars. DSC03509

Stir until just combined. DSC03510

Fill muffin cups to the top. DSC03511

Finished product. These are moist and chewy and full of flavor. A great winter time snack.

 

INGREDIENTS:

3 CUPS OF ALL PURPOSE FLOUR

1 TABLESPOON OF BAKING POWDER

1/2 TEASPOON OF BAKING SODA

1/2 TEASPOON OF SALT

1 TABLESPOON OF CINNAMON

2 TEASPOONS OF GINGER

1 1/4 CUPS OF MILK

2 LARGE EGGS

1/2 POUND BUTTER MELTED (2 STICKS), COOLED

1 1/2 CUPS OF COARSELY CHOPPED CRANBERRIES

1/2 CUP OF MEDIUM DICED FIGS

3/4 CUP OF CHOPPED PECANS

3/4 CUP BROWN SUGAR

3/4 CUP OF GRANULATED SUGAR

PREHEAT OVEN TO 375*

Line muffin tin with paper liners or spray the tin. Sift together the flour, baking powder, baking soda, salt, cinnamon, and ginger in a large bowl. Make a well in the center of the mixture and add the milk, egg, and melted butter. Stir quickly until just combined. Add the cranberries, figs, nuts and both sugars and stir until just combined. Spoon the batter into the muffin tin, filling each one to the top. Bake for 20 to 25 minutes until browned on the top and a toothpick inserted comes out clean.

This sounds like a wonderful recipe. I can't wait to try it on the grandkids. I am always looking for something new to try with them. Now that they are so much older, they are game for good stuff. We actually have a teenager the oldest to a two year old the youngest. (7) of them and they all love to eat. When they come on Sundays I like to have treats for them. I will let you know how these work for us.
