Refried beans homemade (recipe here) I will never buy refried beans in a can ever again.  This recipe is so easy to make and they have more flavor than the can version.IMG_3445 copy

1 bag shredded lettuce

1 cup shredded cheddar cheese 1 can black olives, sliced Salsa or red sauce 4 small tostados

Preheat oven to 400 degrees. Arrange the tortillas on a rimmed baking sheet. Sprinkle the cheese evenly over the tortillas, bake until golden brown, about 10 minutes.

IMG_3447 copy Warm beans in a skillet. Unless, you just made them then they will be ready to go.  I made mine a few hours before dinner.  Place a shell down put beans, cheese, salsa, black olives and lettuce on top.IMG_3452 copy

Uh umm.....dieting here. That's okay, I'll leave the cheese off.

I had never made my own refried beans until last summer. OMG! They taste wonderful.
