Brownie Krispies

IMG_5201I had the hardest time finding vegetarian marshmallows, actually I couldn't find them locally.  I used marshmallow fluff, but I think it made it to sweet.  Mike and Hailee really liked it, but I thought it was too rich.  I am going to keep a look out for vegetarian marshmallows and try again.

Brownie Krispies

1 box brownie mix + additional ingredients to bake brownies according to package directions or you can make homemade here is Hailee's homemade brownies (which are really good).

4 cups vegetarian mini marshmallows or marshmallow fluff

1 1/3 cup semi-sweet chocolate chips

1 cup creamy peanut butter

3 tablespoon butter

2 cups crispy rice cereal

IMG_5151 Bake brownies according to package directions in a greased 9×13″ baking pan.  Two minutes before they are supposed to be baked, pull brownies from the oven and sprinkle marshmallows across top.  Return to oven for 2 minutes to soften marshmallows.  IMG_5153Remove from oven and spread marshmallows across top of brownies.  Let cool completely.  Unless, you are using the marshmallow fluff you need to let the brownies cool completely and then spread it on and I didn’t put it back in the oven because it didn’t need to be softened.

Prepare crispy topping:  combine chocolate chips, peanut butter, and butter in a bowl.  Heat in microwave for 30 seconds at a time until mixture is melted and smooth.  Add cereal and stir to coat.  Pour over marshmallow layer and spread evenly.  IMG_5155 

IMG_5158Place brownies in the refrigerator for at least an hour until chilled.  This helps make them easy to cut and makes them a little less messy to eat.  IMG_5173Make with marshmallows instead of the fluff and enjoy!

It does look rich but delicious! Have you tried making your own marshmallows? That is what I do sometimes. I have a couple of different vegan recipes for making marshmallows. I think I will try this recipe this weekend.
