When we were eating meat the Hubby and I loved the buffalo chicken sandwiches and wings that are so popular in our neck of the woods. In our never ending search for new ways to serve old favorites "vegetarian" we came up with this easy recipe for a quick dinner.
Ingredients:
1 Package of Morningstar frozen chicken patties
1 Bottle of Buffalo wing sauce/marinade
1 white or yellow onion, sliced thinly
Blue cheese
Sliced cheese of your choice
hamburger rolls
mayo
Follow the directions on the package of chicken patties. While the patties are baking, place 1 tablespoon of olive oil in a skillet and over low heat sauté' onions until caramelized.
While the onions are cooking, open the buffalo sauce and pour about 1/2 cup into a small sauce pan and heat on low. ![]()
Put a smear of mayo on each side of the bun. Next place your sliced cheese and crumbled blue cheese/gorgonzola.
When the chicken patties are done, grab them with some tongs and place one at a time in the sauce, until fully covered.
Place the chicken patties immediately on the prepared buns. Top with onions.
As always at Cottage Sisters, this is a quick and inexpensive meal. We got rid of the meat but not the flavor!

We have very limited vegetarian options in Australia, but will certainly be trying this with whatever I can get my hands on. Looks like I'll have to make my own buffalo sauce too...

Yum! That sounds so good! I've been trying to enjoy some vegetarian versions of our faves also, and this is a great remake recipe. Sounds like we all like alot of the same foods. And I really enjoyed the squirrel photos, we hand-feed ours here at our home too, and our friends think we're crazy! I'll be back to visit you all, for sure!
