Caramelized Apple Waffle Pastries w/Cinnamon Whipped Cream.....Meatless Monday

IMG_5509 copyI have been seeing a lot of things made in a waffle maker lately .  Have you girls seen this?  I saw where someone made little cakes in a waffle maker.  I bookmarked it because it looked really good.  When I saw this one I really wanted to make it, I thought it would be like apple pie without the crust.  Hailee and I are not big crust girls.  I usually eat the insides out of a pie and leave the crust.  I love puff pastry though.  A couple of things, I left the skins on the apples and it was good, but next time I would peel them. The whipped cream doesn't call for any sugar....it needs a little.  I want to make them with bananas like a bananas foster type dessert and serve it warm.  I'm doing that next time!  I loved the puff pastry cooked on the waffle maker, it was quick, easy and it gave it a new look.

Caramelized Apple Waffle Pastries w/Cinnamon Whipped Cream

Caramelized Apples:
3 tablespoon unsalted butter
5 large apples, peeled, cored and cut into wedges
½ cup white granulated sugar
1 teaspoon cornstarch
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1/8 teaspoon salt
2 teaspoon pure vanilla extract

Waffles:
1 sheet frozen Puff Pastry, thawed
2 tablespoon granulated sugar
1 teaspoon ground cinnamon

Whipped Cream:
1 cup heavy whipping cream
½ teaspoon ground cinnamon
½ teaspoon vanilla extract

IMG_5431 copy Prepare Caramelized Apples: In a large skillet over medium-heat, melt butter. Add apples, sugar, cornstarch, cinnamon, nutmeg and salt. Stir apples into sugary, buttery mixture until coated. Let apples cook and caramelize, about 15 minutes, stirring every so often (reduce heat as needed). Remove skillet from heat and stir in vanilla. Set apples aside to cool.IMG_5436 copy Prepare Waffle Pastries: Preheat waffle iron. Unfold puff pastry. Use sharp knife and cut along seams to create three rectangles. Cut each rectangle into thirds. You should have nine square pieces of puff pastry (about 2 1/2″ x 3″). Combine sugar and cinnamon: Sprinkle tops of puff pastry squares with cinnamon-sugar mixture.Spray waffle iron with nonstick spray.

Place puff pastry onto waffle iron (two at a time) and close waffle iron. It should only take 2 or 3 minutes for the pastry to puff up and turn golden brown. Gently lift the waffle iron to watch progress and remove the waffles when done. Repeat with remaining pastry dough. Set pastry waffles aside to cool.IMG_5467 copyIMG_5478 copyIMG_5473 copyPrepare whipped cream: Using electric mixer, beat whipping cream until stiff peaks form. Add cinnamon and vanilla.

Assembly: Place waffle pastries on serving platter and top with caramelized apples, drizzling pan juices too. Pipe whipped cream on top of the apples. Serve immediately.IMG_5484 copyIMG_5488 copyIMG_5503 copyHailee put them together, she does such a good job!  We stacked ours but you don't have to do that.  Hailee also drizzled some of the sauce around the plates and sprinkled a little powdered sugar on the plate before we put them together.  She also drizzled more sauce all over once they were together.  What is that saying?  Presentation is everything!

Cooking Tips:Since this dessert is served at room temperature (or cold), it can easily be made ahead. Prepare the waffles, let cool and then keep in a covered container. Prepare the apples, cover and refrigerate until ready to serve. Whipped cream should be prepared just before serving.*Try serving this dessert warm too, replacing the whipped cream with ice cream & a drizzle of caramel syrup.
