Carolina Barbeque Sandwich (For Vegetarians)

While we don't miss the meat in our house, there are times we miss a dish we ate when meat was on the menu. One of those dishes is barbeque sandwiches. The Hubby really loves them. I have to admit I love them also but I like mine Carolina style, with the coleslaw slapped right on them!!! Yummmmmm! When Morningstar came out with their riblets I became inspired. My sister and I love to re-create meat meals into vegetarian versions. These came out really delicious and we never even missed the meat!

Ingredients:
1 box of Morningstar Riblets
1 recipe for coleslaw
1 package of hamburger buns
Mayo for the buns
Additional barbeque sauce if desired

Preheat your oven to 350* per the package of riblets. Follow directions for baking. As you will see I add just a touch more barbeque sauce, just cuz!!!

While the riblets are baking, slice buns open and slather mayo on each side. How much is your business and no one else!

When the riblets are done carefully remove them from the oven and let them sit a minute or two. Carefully remove the foil, (super careful here as there is some steam).

Place 1/2 of a rack on your open bun. Scoop some slaw onto your riblet and top with other half of bun.

I serve mine with some potato salad on the side. Vegetarian barbeque never had it so good!
