Pizzelles..........

IMG_5226 copyThese cookies are one of my favorites, one they are tasty and two they are so easy....my two favorite things! 

Pizzelles

3 large eggs

¾ cup sugar

2 teaspoon vanilla extract

1 stick (½ cup) butter, melted and cooled

1 ¾ cups all-purpose flour 2 teaspoons baking powder

 IMG_3652 copy Melt butter and set aside. Beat eggs and sugar until light yellow, 2-3 minutes. Add melted butter and vanilla. Beat until blended. In a separate bowl add flour and baking powder together. Fold flour mixture into butter and egg mixture a little at a time folding until just blended, add remaining flour and fold again until just incorporated. IMG_3654 copy  Heat pizzelle iron, brush oil over iron only need to do this once. Place about 1 tablespoon of batter on grid just behind the center of the pattern. Bake until golden brown, about 30-40 seconds. Remove and cool on a rack. Repeat with remaining batter.IMG_3628 copy

Chocolate Pizzelles: Using the basic recipe, omit the vanilla and add 3 tablespoons cocoa and 3 tablespoons sugar. Bake the same way.

I love pizzelles! My mom is the family pizzelle maker. We typically make them for Christmas. My mom uses the same pizzelle maker my great grandmother used and brought with her from Italy.
