Caramel Sauce.....

IMG_6191 copy I have never made caramel sauce before it was one of those things that I think "I'm not a good enough cook to make something like that......it is way to hard".   Turns out like the refried beans, I was wrong!  It was actually very easy and I cannot get over how much better fresh caramel sauce tastes than the bottled stuff!  I really need to get out more often and see the world.
I found this over at Baked Bree.  I love her food and her photos are gorgeous.  She actually had me a little freaked out about it.  Bree had talked about burning herself and a pan making some other caramel dish.  I will tell you I understand the burning yourself thing now.  When you put the whipping cream in, it bubbles up and you have to keep whisking and it splashes.  But keep going it is so worth it....I promise.
I had some left over pineapple from Mother's Day.  The first thing that came to mind was Jill's grilled pineapple dessert with this caramel sauce.
Caramel Sauce

1 ½ cups sugar
1/3 cup water
1 ¼ cups heavy cream
½ teaspoon vanilla
IMG_6168 copy Put the sugar into a sauce pan and add the water. Do not stir the sugar.  Once dissolved if you stir the sugar it will form crystals up the side of the pan. 
Cook the sugar and water over medium heat.
Bring the sugar to a boil.  Have your cream and everything ready to go.
When it starts to get to this stage, keep a close eye on it.  This takes about 10 minutes.
When it turns a dark golden amber color (350 on a candy thermometer) you are ready to pour in the cream.
It is going to bubble like crazy.  Just keep whisking and it will all come together.
Take off the heat and add the vanilla.
Allow the caramel to come to room temperature.  It will thicken up as it sits.  Keep it in the fridge. 
Mine didn't thicken up until it sat in the fridge all night.  Look at the color, isn't it gorgeous?IMG_6194 copy

Oh this looks divine! Like you I"ve always been a bit afraid of making caramel. Really, the worst that can happen is I have to throw it out, right? Your photos have convinced me that I must give this a try. We'll be making ice cream a lot this summer and how awesome to have this as a topping.
