This last weekend I was able to shop for produce at a wonderful farmers market. They offered some beautiful pineapple and it got me thinking about a dessert I had seen Bobby Flay do on his show. I decided to give it a try and I have to say it was really delicious. I have never eaten grilled pineapple but it has such a great flavor. The grilling really brings out the sweetness of the fruit. The other bonus for me is that it's a simple dessert to pull together.
Ingredients:
1 fresh pineapple, peeled and sliced in rounds
Ice cream, I used Dulce De Leche (caramel)
Caramel sauce.
Cut off the top and trim away all the rough skin of the pineapple.
Slice rounds off about 1 to 1 1/2 inches thick.
This is an optional step, but I brush my slices with canola oil so the pineapple caramelizes better with great grill marks.
As the pineapple grills it gets sweeter and softer, even the core gets softer. Remove from the grill when you have a nice caramel color and good grill marks on either side. I used my indoor grill but Bobby Flay did his on an outdoor charcoal grill!
Allow your slices to cool slightly or your ice cream will melt too quickly. Place a slice on the dessert plate, top with a scoop of ice cream and drizzle some warmed caramel sauce. If you really want to go over the top like we did, add some fresh whipped cream!
Really, this was one of the best desserts I have ever eaten. The flavor of the grilled pineapple along with the ice cream and warmed caramel sauce is divine! This dessert looks great, is quick to make and very budget friendly!

OMGoodness, third pineapple post I've read today! One person was growing 'em and another made 'em into salsa. This looks REALLY good - very happy that merely gazing is non-caloric ;)
