Homemade Tortilla Chips.....

I know some of you have said you don't like to deep fry things. I hear you!  But my thought on this is, I would rather deep fry it myself and know what is being used and that there are no preservatives or chemicals in them.

I found this at Kevin and Amanda's Blog

 Homemade Tortilla Chips

Printer~Friendly

3 cups oil

1 package of flour tortillas

 IMG_8774 copy Fill a small (10″) skillet with about 1″ of vegetable oil.  Begin heating over medium to medium high heat for about 10 minutes.

Grab a stack of tortillas. Cut into 1/8’s to make perfect little chips.IMG_8780 copy

IMG_8800 copy After about 10 minutes the oil should be hot enough. Make chips in batches, take one stack of chips and place them in the oil.IMG_8828 copy

Flip one over and check on it after about a minute or so. The first batch usually takes a little longer because the oil isn’t as hot yet. But as soon as one side starts to get golden, flip them over.IMG_8830 copy When both sides are brown and golden, immediately remove from oil with tongs and place on a wired rack lined with a paper towel. Immediately sprinkle with a healthy pinch of kosher salt or parmesan cheese.IMG_8858 copy Repeat the process for the rest of your chips.

I took one bite and the first thing I thought was.....I just figured out how Old Juan's makes their chips.  We have a Mexican Restaurant in town and they have really good chips.  I just figured why their chips are so light and fluffy because they use flour tortillas instead of corn. Hailee's friend works there and I happen to know that they add parmesan cheese to their chips too.  Which after Hailee took one bite she said...They need parmesan cheese!

Anyone that knows me won't be surprised to know that I had to make some with cinnamon and sugar on them.  IMG_8926 copy

These were so good I may never buy tortilla chips again!  I can't wait to make these to go with my favorite Avocado and Black Bean Dip.....Yum!
