I have never made twice baked potatoes and I have probably only had them once. Which is weird because I love baked potatoes, usually covered in cheese and I make them a lot. First you have to make the ultimate baked potatoes because I made them wrong for years. I use to cook them in tin foil, I found out that is steamed not baked potatoes.
Baked Potatoes
3 russet potatoes, choose potatoes with uniform shapes and sizes
Olive oil
Salt
Adjust the rack in your oven to the middle position and preheat oven to 400 degrees. You can put them on the rack but this makes a mess on the bottom of your stove even with tin foil on the bottom. I put mine on a cookie sheet.
Rinse and scrub each potato under cold running water, as you will be eating the skins of these perfect potatoes. Dry each potato thoroughly.
Pierce each deeply with a fork or sharp knife four times on each side at approximately 1" intervals. This will allow steam to escape during the baking. If you don't prick the potatoes, they may explode during baking in your oven.
Rub the potatoes with olive oil and sprinkle with salt all over the skin.
Bake on racks or cookie sheet until tender. 60 minutes at 400 degrees.
Potatoes are done if tender when pierced with a fork test for doneness by gently squeezing the middle of the potato. If it gives in easily to your touch, it is done.
The higher the oven temperature, the shorter the cooking time will be and the crustier the skin. Larger potatoes will take longer to bake.
Turn the potatoes over halfway through the baking time to prevent browning of the undersides where they touch the oven rack. When you use a cookie sheet you don't have to do this.
When baked to perfection, remove potatoes from the oven. Slit across the top with a sharp knife. Gently pinch (squeeze) in each end of the potato towards the middle (using your thumb and index finger). The potato will pop oven loosen the fluffy white interior from the skin.
Then to make them twice baked....I only made three and adjusted but thought you might want the recipe for 4.
The ultimate Twice Baked Potatoes
4 large baking potatoes
8 slices veggie Morningstar bacon
1 cup sour cream
½ cup milk
4 tablespoons butter
½ teaspoon salt
½ teaspoon pepper
1 cup shredded Cheddar cheese, divided
8 green onions, sliced, divided
Preheat oven to 350 degrees. After you make the baked potatoes.
Cook veggie bacon or the bacon you like
When potatoes are done allow them to cool for 10 minutes. Slice potatoes in half lengthwise and scoop the flesh into a large bowl; save skins.
To the potato flesh add sour cream, milk, butter, salt, pepper, 1/2 cup cheese and 1/2 the green onions. Mix with a hand mixer until well blended and creamy. Spoon the mixture into the potato skins.
Top each with remaining cheese, green onions and bacon.
Bake for another 15 minutes.
They were really easy to make and they were delicious!
