Andes Chocolate Mint Cookies....

I try to make homemade treats because I don't like to use products that have a lot of ingredients, especially ingredients I can't pronounce but every once in awhile I slip up.  I was in the mood for chocolate and didn't have a lot of time.  I saw this recipe, it was quick and easy.

Andes Chocolate Mint Cookies

Printer~Friendly

1 box Devils food cake mix

2 eggs

½ cup oil

Andes mints, unwrapped

Dump all into a large bowl, beat until combined

Scoop with and ice cream scooper onto cookie sheet and bake at 350 degrees for 7 minutes, don’t over bake, you want them soft. Immediately, push an Andes mint gently down in the center of each cookie.

Wait a minute or so, then take a toothpick and swirl the melted mint into a circle.

Depending on the size of your ice cream scooper you might need a whole mint but if your scooper is small just use half of the mint candy.  My cookie was so big I think next time I will use two mints on it:)

Oh dang, here I was about ready to paint some small tables, wash all the windows, and even fold fitted sheets, and now what am I going to do instead?
Head for the A&P and get some cake mix and Andes mints.
