Rigatoni with Walnut, Parsley, and Sun Dried Tomato Pesto

Are you a pesto fan? Do you crave flavor? Well then you came to the right place today Sister! Put your big girl panties on for this one, flavor woosies need not apply! I have no idea where  I swiped this from, but it came from somewhere in the blogosphere. If this was your recipe then I apologize profusely that you are getting no credit here. When I read the ingredients this recipe instantly had my name on it. Aside from the fab flavor the thing this recipe has going for it is that it's way too simple. I hate that, don't you??
Ingredients:
1 cup of fresh flat leaf parsley
1 cup of walnut pieces ( I used pecan because I like the flavor better)
1/2 cup of grated parmesan cheese ...or so
1 small garlic clove (how coy, I used about 4)
3 tablespoons of olive oil soaked sun dried tomatoes
1 teaspoon of lemon juice
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon of sea salt ( used Kosher)
1/4 teaspoon of ground black pepper
5 tablespoons of olive oil plus extra for garnish ( I added more)
1 tablespoon of water if needed (you will need more)

Start your pasta and follow box directions. When done reserve some pasta water to add to the pesto if you like.

Place the parsley, nuts, garlic, and cheese in the food processor and pulse until you have a fine chop.

Add the sun dried tomatoes, lemon juice, crushed red pepper, salt and pepper. With the machine running gradually add your olive oil. the recipe says this makes a thick and knobby pesto. I like my pesto a little less knobby so I added more. You can add the water as well if you want your pesto more liquid.

You should have something that looks like this. I put my pasta in a large bowl, added the pesto and some pasta water and tossed.

Top with some extra parmesan and you have a meal fit for a Queen! This has to be one of the best flavored pasta dishes I have ever made. You can't stop eating it!
The leftovers are wonderful also.
