Black Bean Sliders.......

IMG_7937 fresh colorI found this recipe over at Baked Bree.  If you haven't seen her blog you should check it out.  Not only does she have great recipes my favorite Taco Salad came from her but she is also a wonderful photographer and her pictures are beautiful, she even has tutorials on how to improve your pictures. 

These are really easy to make and you could alter it to include anything you want.  I thought some mushrooms would be good in it.  We topped ours with El Diablo Salsa, funny story Hailee doesn't like salsa but she can't stop eating this one, she has been calling it crack because it is so addictive and good.  She also doesn't like black beans and she really liked these over the box veggie burgers.

You could probably use garbanzo beans instead of black beans for a different flavor.  We all make ours different.  Hailee just put pepper jack cheese and salsa on hers.  Mike used soy cheddar cheese, mustard and garlic mayo on his.  Use your imagination and make them to your taste!

No need to go out for veggie burgers anymore!

Black Bean Sliders

1 (14-ounce) can black beans, drained (reserve some of the liquid)
1 medium onion
2 cloves garlic
1 tablespoon taco seasoning
1 egg
½ cup bread crumbs
½ cup corn (frozen or fresh)
¼ cup cilantro
2 tablespoons olive oil for cooking

IMG_7900 fresh colorIn a large bowl, combine everything except the corn and black beans.  Mix well.

Add the black beans and corn.  Mash with a fork until still chunky.  If the black bean mixture is too dry, add the reserved black bean liquid a little at a time until it is like a thick paste.  Let the mixture rest in the fridge for a few minutes.  Shape into small patties and let sit in the fridge for 15 minutes.IMG_7910 fresh color

IMG_7913 fresh colorIMG_7914 fresh colorHeat a large pan over medium high heat and add the olive oil.  Cook the burgers for 5 minutes on each side.  The burgers will be nice and brown on the outside.IMG_7922 fresh color IMG_7924 fresh color

To Assemble:

Mini-burger buns

cilantro
salsa
guacamole

mustard

garlic mayo

I put the leftovers in the fridge, I thought they would make good fend for yourself meals.
