Pizza Puffs........

IMG_9895 fresh color   Happy Meatless Monday!  These were really good they would make a great after school snack.

Pizza Puffs

¾       cup flour
¾       teaspoon baking powder
1        tablespoon Italian seasoning
Pinch of salt
Pinch of red pepper flakes
¾       cup milk
1        egg, lightly beaten
1        cup shredded mozzarella cheese
¼       cup grated Parmesan cheese
1        cup diced pepperoni
½       cup pizza sauce

Preheat the oven to 375 degrees.

Grease a 24-cup mini-muffin pan.   I used olive oil spray.IMG_9843 fresh color In a large bowl, whisk together the flour, baking powder, Italian seasoning, salt and red pepper flakes. IMG_9845 fresh color

Whisk in the milk and egg. IMG_9860 fresh colorStir in the mozzarella, Parmesan and pepperoni.  Let mixture stand for 10 minutes. 

Veggie pepperoni looks like this out of the package, cut it into strips and cut the strips again and so they are diced up.IMG_9849 fresh colorIMG_9854 fresh color IMG_9858 fresh color Stir the batter then divide it among the mini-muffin cups.

Bake until puffed and golden, 20 to 25 minutes.

Microwave the pizza sauce until warmed through and serve with the puffs for dipping.  I used this pizza sauceIMG_9890 fresh colorHave a wonderful day!

I'm going to make these for a NYE appetizer!

My husband is Celiac so I plan to sub out the flour with some variation of GF flours. I'll let you know how they come out!
