Taco Bell Quesadilla.....

IMG_9682 fresh color Hailee and Mike love TB's Quesadillas.  I tried to make them like I thought they would be made.  To me, it looks like the cheese from the mac and cheese that I make, where I make a roux first then add the cheese, but no that isn't how it is made.  They said it was good but not the same.  So I went to trusty Google and looked up the recipe.  Did you know that they use mayo in their quesadilla?  I had no idea!  They put a sauce on it and use three different types of cheeses.  Hailee didn't like the minced jalapeno slices so the next time I just added a little extra jalapeno juice and left out the minced jalapeno slices.  Mike thought it tasted just like Taco Bell's, but better because I made them crispy.  My family likes everything crispy!

Taco Bell Creamy Jalapeno Sauce Recipe

¼          cup mayonnaise
2          teaspoons minced jalapeno slices
2          teaspoons juice from jalapeno slices
¾          teaspoon sugar
½          teaspoon paprika
½          teaspoon cumin
1/8      teaspoon cayenne pepper
1/8      teaspoon garlic powder
dash salt

Prepare creamy jalapeno sauce by combining all ingredients in a small bowl and whisk.

Cover and chill so that flavors develop. Stir occasionally.

Use 1 tablespoon sauce per tortilla.  IMG_9631 fresh color

Taco Bell's Quesadilla Recipe

One recipe of jalapeno sauce 

4          large flour tortillas (10-inch)
1          cup shredded cheddar cheese
1          cup shredded Monterey jack cheese
2          slices American cheese

IMG_9627 fresh color Preheat a 12-inch skillet over medium low heat.

When the pan is hot lay one tortilla in the pan. Arrange about 1/4 cup of shredded cheddar cheese and 1/4 cup of shredded jack cheese on half of the tortilla. Tear up half a slice of American cheese and arrange it on the other cheeses.

Spread about 1 tablespoon of jalapeno sauce over the tortilla on the half with no ingredients on it.

Fold the sauced-covered half of the tortilla over onto the ingredients on the other half and press down with a spatula.

Cook for about 1 minute, then turn the quesadilla over and cook for a couple more minutes or until the cheese inside is melted. Slice into four pieces and serve hot. Repeat with the remaining ingredients. IMG_9648 fresh colorIf you want to make them veggie chicken quesadilla.  Fry or grill your favorite chicken substitute with salt and pepper.  Thinly slice and arrange about 1/4 cup of sliced chicken over the cheese.

That looks like really good Sunday comfort couch food to me! I haven't had the ones from Taco Bell, but I'm sold on yours. I'll make these for David one day and let you know his verdict. :)

This sauce has been my white whale for many years. I made steak quesadillas; this tastes just like Taco Bell. AMAZING.
