Taco Soup……

IMG_1004 fcHappy Meatless Monday!  We have been trying to eat healthier by eating more beans and salads.  A really good way to get beans is with soup, I have found a few really good recipes lately and I know they are good because Hailee likes them and she claims she doesn’t like soup.  Soooo, if a person who doesn’t like soup says they are good…..I think they must be really good!  This has all the flavors we like so I was sure my family would like it.
Taco Soup

2        tablespoons olive oil
½       cup diced onion
2        cloves garlic, minced
1        can pinto beans, drained
1        can kidney beans, drained
1        cup frozen corn
1        14 ounces can Rotelle tomatoes with green chilies
1        28 ounces can crushed tomatoes
2        cups water
1        package taco seasoning mix
1        package ranch dressing mix

1        package meatless meat
IMG_1000 fcAdd the oil to a large pot and cook the garlic and onion for a few minutes.  Add remaining ingredients, and simmer for 30-60 minutes. 
Serve with taco toppings, such as sour cream, shredded cheese, sliced green onion, olives and crushed tortilla chips.IMG_1008 fcThis was really good, I will defiantly be making this one again.
