Vegan Rice Krispy Treats.......

Some people might not know this but vegetarians won't eat marshmallows because there is gelatin in them.  Gelatin is made from the boiled bones, skins and tendons of animals.  I recently found a vegan marshmallow.....I'm so excited about this because we haven't had rice Krispy treats in forever!  I have made them several times and they are so good I swear I could eat the whole pan myself.  Only Mike and Hailee would be mad at me, so I was nice and let them have some too.

I know everyone knows the Rice Krispy recipe but here it is.  To make them vegan you also have to use a butter substitute like Earth Balance.

Rice Krispy Treats Vegan
3 tablespoons Earth Balance butter
1 package Dandies vegan marshmallows
5 cups rice Krispy cereal (or something like it I got mine at Trader’s and it is called Crispy Rice cereal)
In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.
Add rice Krispy cereal. Stir until well coated.
Using buttered spatula or wax paper evenly press mixture into 13 x 9 x 2-inch pan coated with cooking spray or rubbed with earth balance butter. Cool. Cut into 2-inch squares. Best if served the same day.
Store no more than two days at room temperature in airtight container.
To freeze, place in layers separated by wax paper in airtight container. Freeze for up to 6 weeks.
Let stand at room temperature for 15 minutes before serving.
