Happy Meatless Monday! Here is another recipe I found and turned it vegetarian. I don’t know if I would call mine a taquito because they were a little on the thicker side, I thought they were more like a burrito. Which they were really good, except I would like to try and make them a little thinner next time and get a real taquito size. I used large tortillas, when I make these veggie chicken taquitos, I always use a small tortilla. I’m pretty sure that is what I did wrong, even though there was nothing wrong with them. Hubby said they were definitely a keeper. UPDATE: I made them again with the smaller tortillas and they were good but hubby likes them burrito style. I think I will have to change the name of the recipe. I’m thinking Cheesy Burritos.
Veggie Chicken and Cheese Taquitos
1 bar cream cheese
½ cup green enchilada sauce
2 tablespoons lime juice
1 teaspoon cumin
1 teaspoon oregano
2 teaspoons chili powder
1 teaspoon onion powder
salt and pepper
2 cloves minced garlic
1/3 cup chopped cilantro
4 green onions, sliced (greens and whites)
3 cups shredded cooked chicken
2 cups shredded Monterey Jack cheese or a mix of Mexican cheeses
1 small package flour tortillas
I of course, used my favorite veggie chicken.![]()
Cook your chicken or use leftovers up. I had this bag of already diced up veggie chicken I used. Next time I want to get the veggie chicken that are still whole and shredded it. This was easier than shredding though.![]()
I forgot to put the green sauce in the first picture. I couldn’t find the exact same kind that Baked Bree used. This is the closest I could find to hers but it is made by the same company. (I live in a small town and we don’t get a lot of stuff regular people get) ![]()

In a large bowl, mash together the cream cheese, enchilada sauce, lime juice, spices, garlic, and green onions.
Mix it together. Season with salt and pepper.
Add the cheese, cilantro, and shredded chicken.
Warm up your tortillas so that they are more pliable. Put a few tablespoons of the filling in the tortilla and roll up.
Line a baking sheet with tin foil, spray it with cooking spray. Place the taquitos seam side down.
Spray the top with cooking spray.
Bake in a preheated 400 degree oven for about 10 minutes or until the tortillas are brown and crispy.
By the end I got pretty good at rolling them. When you are rolling half way push down like you are rolling a rolling pin and it makes them rounder instead of square like the first two I did.![]()
