Avocado Chimichurri Bruschetta……

If you like avocados you have to try this one…….it was so good.  I found this recipe over at Elle's New England Kitchen.  We are trying to eat healthier by eating whole foods and limiting sugar.  I have tried some new recipes that have all turned out really good.  This one was really good the way it was, but after we were done Mike said he thought it would have been even better, if I would have added diced tomatoes and red onions.  That does sound good.

Avocado Chimichurri Bruschetta
2 tablespoons lemon juice
2 tablespoons red wine vinegar
3/4 teaspoons salt
1/2 teaspoons dried oregano
1/4 teaspoons ground black pepper
1/4 cup olive oil
1/4 cup chopped cilantro, minced
1/4 cup chopped fresh parsley, minced
2 avocados, peeled, pitted, and cubed
6 slices of toasted whole-wheat baguette, rubbed with garlic cloves
Combine the lemon juice, vinegar, salt, oregano, and black pepper in small bowl.   Whisk in the oil until thoroughly combined, then stir in the herbs.   Gently toss the avocado cubes into the sauce.  Spoon the avocado and sauce mixture onto toast slices.
Serves 3, 2 slices each
