This is Hailee's new favorite meal! This is the first time she has ever had sweet and sour chicken and now she keeps asking for it. I have to be careful not to make it every time she asks for it because she gets burned out on food really easy. I found this over at Let's Dish and turned it into a vegetarian version. I added bell peppers, snap peas and bean sprouts just to have more veggies in our day and I reduced the sugar to 1/2 cup brown sugar. It was very quick and easy to make it will be my new go to meal when I need something fast and easy. I used one box of the Quorn meatless meat chicken but they also have a bag of meatless chicken that is already diced. I love convenience. This is my new favorite mock chicken, I was very disappointed to find out that Morning Star puts cellulose in their products. Which I just learned from Dr. Mercola is wood pulp. Yuk! That doesn’t sound healthy to me.
Sweet and Sour Chicken
1 box of Quorn chicken, diced into chunks
1 bell pepper, diced
¼ cup bean sprouts
¼ cup sugar snap peas, trimmed
Salt and pepper, to taste
1 cup cornstarch
2 eggs, beaten
¼ cup canola oil
1/2 cup brown sugar
4 tablespoons ketchup
½ cup vinegar
1 tablespoon soy sauce
2 cloves garlic, minced
Cooked brown rice

Preheat oven to 325 degrees.
Dice the bell pepper and put in a baking dish with snap peas.
Put eggs in a bowl and scramble and in a separate bowl place the cornstarch in it and season with salt and pepper.
Dip chicken chunks in beaten egg, then in cornstarch.
Fry in a little oil until brown but not cooked through.
Place in a single layer in the baking dish with the vegetables.
In a medium bowl, combine sugar, ketchup, vinegar, soy sauce and garlic. Mix well and pour over chicken.
Bake for 20 minutes, turning chicken halfway through cooking so it is evenly coated with the sauce. When done cooking stir in bean sprouts and serve over rice.
